Ingredients:
- 350g flour
- 1tsp baking powder
- 1tsp ground ginger (optional) you could switch it up for cinnamon if you wish
- 225g butter
- 175g golden caster sugar
- 175g soft brown sugar
- 1tsp vanilla extract
- 2 eggs
- 350g white and milk chocolate cookies
Method:
- 1~ preheat the oven to 190°C /375°F/ gas mark 5.
- 2~ mix the flour, baking powder and ginger together into a bowl then throw in you chocolate chips
- 3~ cream together the butter , sugar, brown sugar and vanilla until creamy in another bowl and then beat in the eggs.
- 4~ using wet hands, mix the dry ingredients into the wet mixture and knead until you have a dough.
- 5~ Pull the dough into small balls, about the size of a golf ball. Place onto a greased baking sheet and flatten out slightly with a fork. Make sure there is plenty of space around each cookie
- 6~ Bake for ten minutes or until they are golden brown
- 7~ Cool them down
